Cooking at work :) My today's lunch: pasta with cottage cheese. Diet version.
Ingredients:
75g of pasta (here, a cheap ramen, no need to cook.)
150g of skim cottage cheese
stevia
cinnamon
vanilla sugar
yogurt
Crumble the pasta in the package. Switch the kettle on.
Put the noodles in the mug. Discard the spices or leave them to spice up something else. This is a sweet dish.
150g of the cheese is 3/4 of the 200g pack.
You don't need to use skim if you want a non-diet version.
Put the cheese into a mug. Add about 1tsp of vanilla sugar, and some 2tsp of stevia.
For non-diet, just add a tbsp or two of sugar.
The water should be boiling by now. Pour enough to cover the pasta and some more.
Cover the pasta mug with a coaster and set it aside. Add about 2 tbsp of yogurt to the cheese.
For non-diet, use sour cream.

Break up and stir the cheese+yogurt+vanilla sugar+stevia. Add more stevia to taste - it should be definitely sweet. You might add some yogurt if the cheese paste is too thick.

That is NOT cottage cheese. Cottage cheese has a lot of liquid, with prominent curds. That looks like queso fresco or ricotta.

'cause it is instant noodles. Use real pasta if you have the conditions to cook it. This one literally requires only an electric kettle, or even a water dispenser with hot water. I don't have a stove at work.
