What if I took dough used for tortillas and made a big loaf instead of individual flat tortillas? What then?
You'd have fairly dense bread.

it's called hardtack

then you will have opened the seventh seal and doomed us all
Depends on if you're talking leavened or unleavened. In the case of unleavened, you'll end up with an inedible stone.

Sometimes when I want fresh tortillas, I just bake one big one on a baking sheet and tear it into pieces.
If you shaped it like a loaf of bread, it would be hard and unpleasant in texture unless you leaven it, but then you're just making bread. If you're using corn flour, it'll still have an unpleasant texture even with leavening because corn has no gluten for structure so it won't get light and fluffy like baked bread.

Afghan style
if corn tortillas then hopefully you'd have something like a bland sort of cornbread. That's assuming it would be edible in the first place
None of you have baked in your lives
