Food trucks are often more hygienic than restaurants.
First of all you can see the whole truck so there is nowhere for poor hygiene to hide. Secondly Mexicans run most food trucks and are the most hygienic people on earth. Most Mexicans shower 3 times a day and wash their hands 40 times a day. I would rather eat food prepared in a truck by the poorest Mexican than food prepared by an American with OCD in a michelin starred restaurant.
