basically, you need very ripe bananas. the riper the better. then you need flour, butter, brown sugar, baking powder and salt.

I've always added some vanilla extract to mine but that might be just a personal preference.

It works better than unripe, but only to take off the "raw" edge of green bananas. It doesn't do quite the same thing. Riper bananas that have started to break down and head towards fermentation carry themselves much better in baking recipes.

The whole point of banana bread is to make it when your bananas are too ripe so they don't go to waste. If your bananas aren't ripe enough yet, just eat bananas.

I swapped out some of the All purpose Flour for some whole wheat and add some dried cranberries. And even though it says 4 bananas, I'd used five and just added a little extra whole wheat flower.

Gives it a more earthy taste.

You want moist? Cream cheese banana bread.
1 egg
1/2cup brown sugar
1/4cup gran. sugar
1/4cup greek yogurt
1/2cup butter
2tsp vanilla
2 bananas

1cup AP flour
1/2tsp baking powder
1/2tsp baking soda
salt

Mix egg, sugar, yogurt, butter and vanilla.
Mash bananas into mixture
Mix in flour, powder, soda, salt
Set aside

1egg
1/4cup gran. sugar
4oz cream cheese
3tbsp AP flour
Mix it up

Pour half bread batter in a 9x5, pour cream cheese, pour rest of batter
Bake 350 for 50mins or so

Well it's a loaf. Outside a little firmer than I like but plenty moist inside. Not bad for a first time.
