What are some ingredients I can add to my "chili" to keep it interesting?
I usually use:
Ground pork
Crushed tomatoes
Diced tomatoes
Kidney beans
Black beans
Onion
Garlic
Chili powder
Cayenne pepper

In defense of OP he did say "chili" instead of chili, so his omission of actual chiles and his adding of beans and tomatoes is almost forgivable.

I used to make chili with ground beef until I tried it with beef chuck and dried chilis. I used this as a base, but of course I didn't add the stupid shit like anchovies, star anise, soy sauce, or whatever.
Try making your own chili paste with dried chilies. I also add black beans, frozen corn, diced tomatoes, chopped jalapenos, a bit of cocoa powder, some beer, etc. Deglazing the pan with beer after you sear the beef is nice.
Accompaniments such as cilantro, sour cream, fritos, grated cheddar, nachos, etc. can be nice.
Cocoa powder. Maybe little bit of brown sugar.

I just made a slow cooker full. I'm not a great cook but:
Ground pork
Crushed tomatoes
Black beans
Cabbage
Onion
Garlic
Chili flakes
Chili powder
Cumin
Cinnamon
Cumin and cinnamon are put on the pork while browning. Put 1 too much olive oil in a pan with thinly sliced garlic and a stupid amount of chili flakes until the oil is scaring you. Toss everything into the slow cooker. Cabbage is mostly because I'm poor and it's a great filler for chili.
