I've been eating leftover stir fry in burritos for years. Just add some cheese and refried beans. Chinese and tex mex blend very well.

Have either of you ever been to Asia? Cheese is a pretty common topping to a lot of local foods. I lived in Japan (Tokyo for like 4 years, Osaka for like 3) and traveled to Korea and the Philippines while there, and like I said, cheese is something that can be added to a ton of dishes.
As mentioned above, cheese is a common addition you can get for ramen (pic related, bottom right). It's also a common option for okonomiyaki, takoyaki, kamaboko (known as chiikama), taiyaki, Japanese style curry, katsu, yakitori, etc. I also frequented Shin-Okubo (like Tokyo's Korea Town), and it's also a common topping for chigae, toppogi, hotteok, pajeon, bindaetteok, and a bunch of other Korean dishes.
