Lard. Has to be the real stuff. If you don't care about flavor, and want a quick bean side: take a can of pinto beans, drain it but SAVE the juice. Cook it for 5 mins or so and begin mashing it with a bean masher. Add around half the reserved bean water and continue mashing til you get a nice, runny but chunky bean side. yummy.

There are 3 kinds of Pozole, white, red and green.
Red is from Guadalajara, allegedly, home of the Pozole.
Green is traditionally from Guerrero, and my personal favorite.

its the oddest thing to see this dish so lauded along with cochinita pibil two dishes, meals which I have not tasted even once. What makes it odd is that I have lived in mexico for ten years as a businessman with several associates in numerous southern states, even odder is that I live in puebla for months at a time, somehow this chiles dish is fairly uncommon in my circles

I had a long absence from from /ck/ (posting in /fa/ 90% of the time), but its good to see a Mexican thread with worth while dishes named.

Some dishes to be mentioned are :
Migas de hueso (a stew cooked overnight with pork bones and then thickened with bread), Manchamanteles(chile and fruit stew) , Ancho chile relleno (usually mixed with a sweet and savory filling) , Aguachiles (GOAT when made right), tacos de guisado and seafood tostadas(mainly in ensenada).

There are many more options, but these come to mind. I tried escamoles the other day and it was great, as well as geoduck ceviche

I'd say Mexico City is a top 10 food destination in the world. You can compare it tokyo as it isn't so reliant to its local cuisine (like oaxaca or yucatan) but more so its restaurants and excellent street food. Plus, its a melting pot of Mexican regional cuisine,so you can find anything from baja to chipaneco cuisine in DF.

It's not awful or anything, I just don't see the purpose when all the other taco fillings I've had so far taste better and have a better texture.

But I'll try it again.

So far in my tacos I've had tinga, chorizo, tilapia, al pastor, bistec, pollo, and carnitas. I liked them all, but I think the al pastor would be better with little to no cilantro.

You also need to try smoked marlin, blood sausage, tacos arabes, birria, ensenada style fish taco, camarones enchilados, pibil, and of course a good carne asada with grilled onions and salsa. Depends where you live, you can try at least 4 that I mentioned.

And that's more experimental, I'm sure it's good food but I want to try more traditional stuff first.

And yeah, there's a lot of good Mexican now, a taco truck just opened up in my grandmother's neighborhood from Mexico City and that shit is awesome, they really know what they're doing.

Tacos are tacos anywhere in Mexico. The fillings might be different depending on the region, but that's about it. Only variations I can think of are Pita bread tacos in Puebla, flour in sonora and most of northernmexico, basket/steam tacos in Mexicocity, and crispy tacos in jalisco. Oaxaca does use over-sized tortillas though

Tacos de guisado will have rice in the filling, seafood tacos will have cabbage and a mix of mayo/cream (some times a type of thousandisland), some taquerias will add potatoes/french fries, pibil tacos have purple onions, Carnitas in Michoacan is usually topped with with an escabeche made with a pepper called chile manzano.

Its usually cilantro and onion. That's funny because I usually skip the cilantro on tacos but I like to eat it by itself. I can eat it like candy, stem and all. Some times tacos can't always fill you up. And cilantro is important inMexican cuisine. Use it on salads, soups, sauces, ceviche etc etc.
