Don't listen to these anons. Soy milk definitely won't work but I've used almond milk with success. You just have to use less than what the box calls for. I think it requires 2 cups? Mix in 1 cup of almond milk, then gradually add an additional half cup while whisking or until you get a consistency you like. Best to use unsweetened milk since the pudding will be slightly more concentrated.

Is cashew the most fatty? If so, it might set with that.

If you can't have milk I'm not sure you should be using boxed pudding to begin with. Pudding is really easy to make from scratch anyway. I believe when I did it I used rice milk.
