Why would you turn the heat off before adding the pasta? The egg won't cook properly. Just stir better, use heat control and add pasta water to keep the egg from overcooking. No need to have raw runny egg in your carbonara which barely creates a sauce. It's perfectly possible to get a thick, creamy consistency with your ingredients.
Also I hope that recipe was for two people.

Turning off the heat 2-3 minutes before the pasta is cooked makes sure the pan is hot enough to coat the pasta but not too hot that it would scramble the eggs.

Yeah, coat your pasta in raw egg. You can cook the egg more than that without scrambling it, you want to add the egg immediately after taking it off the heat, stir thoroughly and use pasta water. Your eggs will not scramble, you also have the benefit of cooking the oil and bacon fat into the pasta better.

i made carbonara for my bf family once. His dad, mom and bro all putted half a litre of ketchup on it before tasting it. I was triggered but my bf let me squeeze his hand under the table. I broke two of his fingers.
I hope i don't have to mention we will be moving out soon. His fater grates teflon pans with forks while he makes scrambled eggs that leaves pans with cuts so deep you can clearly see the silvery metal.
