My absolute favorite crepes in the world are from Antoine's in NOLA. You can make a very good facsimile at home. They are seafood crepes, that involve shrimp, crabmeat, and oysters, HEAVILY laced with sherry, plus a seasoned bechamel, that I have never found to be beaten at any restaurant I've eaten at in all my travels.
