Shave thin and pickle in some mirin and rice wine vinegar (maybe add some chillies for a bit of heat (maybe bird eye chilies)) when they are pickled bring a few slices out and toss with a little of the pickling liquid a tiny pinch of salt and some chives
Serve over cooked white meat including fish. and all the appropriate accompaniments.
