this is the sound i make when i am frustrated with the idea of food. (i think barg is also a persian dish like a kabob or something but this is entirely coincidence)

anyway, barg.

my wife is doing a girls night out with some other bitches and I get to take care of our little girl and cook tonight.

i just moved into a nice new house with a convection oven.. and i bought a cast iron pan because it's the latest maymay bullshit and i thought i'd check it out for myself. i mean.. shit they cost nothing.

i am tempted to do a deep dish pizza... but i can't get up the gumption to actually mix up the dough.

i also bought some turkey legs to do in a slow cooker tomorrow but i got home and realized i don't have any beef broth or onion soup mix (which is how i usually slow cook muh turkey legs) liquid smoke has also expired...

Well..

I followed the following ingredients and threw it in a stand mixer.

1 3⁄8 cups lukewarm water
3⁄4 tablespoon granulated yeast (3/4 packet, room temperature)
3⁄4 tablespoon salt
1⁄2 tablespoon sugar
1⁄8 cup extra virgin olive oil (the fruitier the oil, the better the flavor)
3 1⁄4 cups unbleached all-purpose flour

dough looked a little loose so i threw in an extra quarter cup of flour and now it looks about right..

it'll mix for about 6 more minute on low with the hook and then i'll go back to playing with my daughter and contemplating the human experience for a couple hours.

don't forget to oil your cast iron pan, put it in the oven and clean it thoroughly for the first and last time. don't be "that guy" that uses his cast iron like any other pan, don't be "that guy" that cleans his cast iron pan with water or chemicals.

I felt this way too.. but then i realized it was 2012... also found some unrefrigerated balsamic vinegar with an expo date of 2014... had a similar feeling

they both went down the drain. i'll be getting some fresh stuff next time im out... probably later today because i really want those turkey legs tomorrow.

If I had some sopressata I would be all over it with that.. but my mother in law is living with me and I am trying to make her want to leave by only cooking vegetarian around her.

Also.. trying to get a hold of my parents to see if they want to come hang out and offset the MIL... I will ask them to bring some top shelf meatza ingredients if they are going to show...

I got these from "textsfromyourexistentialist" dort corm.

There are some past ones that are no longer in print that I can't find..

There was one about staring into the void and I didn't get a digital copy of it before she sold it out and stopped listing it on her site.

The daughter this is pretty cool. I think they are a lot easier than boys, at least when they are little. boys are little terrors. I think girls are worse when they get older but that has yet to pass.

Having a kid out of marriage is probably a shitty situation and a bad idea.. but if you find the right girl and get married and what-nots then it's the next logical progression of experiencing what it is to be an animal on this planet whose life cycle works through sexual reproduction.

It forces a lot of maturity, and realization on you about things like mortality and aging.

I've seen it turn slackers into working class heroes.. and i've seen it drive men to insanity.

I was a millionaire playboy for decades and then decided to settle it down so for me it was more of a decision and hasn't changed me too much on a personal level, other than it has changed what i do with my time and who i can hang out with reliably. some of the buds are still stags and it's hard to hang with them if the wife can't take over with the kid for a bit...

I'm glad someone brought this up.. I bought a lodge off amazon.com. it was shipped quickly and stuff.

but it showed up with a black sort of coating on it from the manufacturing process. The literature claimed it was "pre-seasoned" but i licked it and didn't taste anything... so i assume that the coating was some sort of machining or release coating so that it would come out of the casting process.

i had to scrub it with sos pads for like an hour before i hit bare metal but eventually i did and now i have a clean pan i can cook in. I oiled it a little so it won't rust. don't worry i have a materials engineering degree and I think I know what I am doing.

I should mention i cooked eggs in it this morning and they came out fine.

it's been about 15. i bumped the temp up to 350 at 10 minutes

i'm getting some color on the cheese now.. i just turned it around.

I'm thinking 20 minutes maybe total time.. and i think bumping to 350 might have been a mistake. i think cooking it in a pan like this just means longer cooking times.. need lower heat for it maybe.. then high heat to finish brown.

gotta get a good bake going.

Not a lot of color dev on sides but bottom looks good. I'm gonna let it sit in the warm pan for another 5 to 10. It was probably in I've for about 20.

I think it needs butter instead of just olive oil.

The flavor isn't quite pizza hut standards on the "fried" crust.

Might have needed to preheat the skillet a little more than i did too... i heated it up and was getting a little oil bubbling on the sides of the pan but i think a little hotter might have been better.

I used bread flour in my dough.. i think all purpose might have been better for frying like this...

I ended up just baking the other loaf instead of doing pizza with it. It came out ok in the cast iron.
