It's a decent trade off and I really do enjoy driving at night with the cool air and the lights. It let's me think to myself more I guess if you know what I mean. But not having the sun is kinda depressing at times.

I seasoned the chicken with salt and a lot of pepper. I seasoned the other Veges with just a little salt.
For the ginger dressing I did everything by eye. I'd say approximately 2 carrots, table spoon of ginger, table spoon of soy sauce, teaspoon of sesame oil, two teaspoons of rice vinegar, teaspoon of canola oil, 1-2 tablespoons of brown sugar, and some water. I also added a pinch of salt and a lot of pepper. It's a very loose recipe that just depends on what you like.

Probably your choice of vegetables. I wouldn't personally use chickpeas or sweetcorn, and peas can sometimes be too sweet. It also looks kind of wet so maybe that's what you dislike. In which case, I would fry the vegetables separately over high heat, then mix it with the chicken.
