You should think about a deep fryer. I have one and it's great for french fries, spring rolls, tofu, pakora and similar veggie fritters, etc.

Will give it a try. So far I submerse them in cold water to remove some of the starch, dry them off, salt them and let them sit on a towel for a while.

I was just thinking of the one my mom used.
We only got it out once or twice a year and it stank up the whole floor and always seemed a bit rancid.
Then again, I probably won't need a deep fryer that feeds 6 people.
Just seems easier to fry them up with a bit of oil in a pan.
