What's the best jam flavor?
>>
Lingon
Anything else is crap.
>>
>>7547148
That would be down to individual preference. Narrow your criteria.
>>
>>7547150
I think OP was asking you what your preferred jam flavor was.

I always got pic related (blackberry jam) back when I used to buy jam several years ago, but now I don't really have it with anything. I prefer maple syrup on pancakes/waffles.

Maybe I'll buy jam and have peanut butter jelly sandwiches sometime though.

Apricot. Good for toast and (American)biscuits as well as an ingredient in meat glazes and marinades.

Some Asian markets carry it. We always have some, along with citron.

You can't really beat a good strawberry jam, but this stuff is great too. Coconut / pandan flavour.

Orange Marmalade. Grandfather made his own and it was excellent.

Better brand coming through.
>>
>>7548779
Never seen it in an Asian supermarket, but it's pretty common in Arab and Hispanic ones.
>>
>>7548779

I don't actually remember which one I've usually had. It came in a hexagonal jar.

I'm intrigued. Care to describe what kind of flavour it has?
>>

has no one here ever had a great pear jam/preserve?
it's light and sweet and cinnamony. my old roommate's sister used to make it from scratch, she was a vegetarian, and we'd eat it on toast at her place with tea.

pumpkin and red raspberry are also top tier.
grape a shit and needs to be exterminated.
>>
>>7549571
It's coconut flavoured. There's also a screwpine/pandan flavoured one.
It's technically a curd, though, not a jam. All the same, it's delicious.

>>7549630
I've only ever seen pear as a "butter" or "cheese" (not sure what the proper term in English would be), kinda like quince and guava. The texture isn't quite like a jam.

It's a bit like the coconut milk equivalent of condensed milk, if you've had that.
>>
>>7549862
Oh I'd let you anon. I can make myself sick eating those. I'm thinking of growing some very soon.

Bacon jam, of course.

>>7549918
This shit is waaay too sweet, only hueland people enjoy it.
>>
>>7549863
Except not at all like that whatsoever.
>>
>>7549918
yes i love it
>>
>>7549952
Isn't it? Not in texture obviously, but in terms of flavour I think it's like coconut milk that's a bit caramelised and sweetened.
>>

Black Currant. Fight me
>>
>>7547148
When it's made and used right, strawberry jalapeƱo jam.
>>
>>7550027
Sounds crazy anon, how do you mean being made "right" and used suitably?
>>
>>7550035
You don't want the jam to be too spicy, but you still want to have some spice in it. And it tastes best when eaten with crackers so you can get the sweet, the spicy, and the salty flavors altogether.

Sounds pretty tasty

Has anyone here had any good experiences making their own jams? Might get into it if the price is right and the process feels rewarding

Blackcurrant is the ultimate berry preserve.

The coconut milk isn't caramelised at all. Nothing in kaya is. It's a curd.
To make it, sugar and egg yolks are beaten together, cooked in a double boiler until quite thick, mixed with coconut milk and allowed to reduce a bit. At no point is there any caramelisation because the top half of a double boiler simply doesn't get hot enough to caramelise.

That said, my favourite straight up jam is red bell pepper. Used to buy it from some Amish, but they don't make it anymore because "no one but [me] buys it!" so I make my own now from time to time.
Of all spreads, though, coconut kaya is my favourite because it tastes like childhood. My brother, who has a super strong sweettooth, used to spread kaya on milkbread then squirt some SCM onto the stuff. WAAAAAAAAAAAaaaaaaaaaaaay too sweet for me, but kaya itself is still delicious.
>>
>>7551299
Well, it tastes a little caremel like to me. Whatever small amount of Maillard reaction that occurs over a couple hours of simmering, it definitely changes colour a little.
>>
>>7547148
>What's the best jam flavour?
Strawberry or Blackcurrant.
>>
>>7551351
>bright yellow/orange-yellow due to huge amount of egg yolk
>"hurr durr muh maillards!!!"
No.
>>
>>7551421
>>7551351
Actually... wait a sec: are you talking about Hainan kaya? That one /is/ caramelised. The top of the double boiler is put directly on the heat to caramelise the sugar then molasses (or honey) are added to both cool it down and cut the bitterness of any burnt sugar. Then, when it's cool enough, egg yolks are added, it's put over the water in the double boiler, cooked until thick, then coconut milk and pandan knots are added.
That /does/ taste caramelised, but it's not the same as sri kaya. If that's the case, I find it weird that you're familiar with some regional variant few people care about but not with sri kaya.

>>7547148
bacon or jalapeno
>>
>>7551434
Huh, I might be, that looks more like the colour I recognise, and my relatives are hakka.
>>
>>7551456
Oh, cool. I like SKK brand for that but not usually on its own, so I mix it with SpreadTalk. What brand you like? Or does your family make their own? I never made any kaya except purple yam.
>>
>>7551472
I don't actually know the brand name, but I know it comes in hexagonal jars. That doesn't really narrow it down much though.
