My boyfriend comes from Nigerian & Zimbabwean parents (but didn't take the accent, thank god) but his mother is always having me try their food. Its not bad, consistency of most dishes was generally thick and mostly spicy. I am very interested in Ethiopian food though I have never had it. I will probably just take a trip to NYC one day (only like 90 minutes away) and go to an Ethiopian place, I know there are some down there.
As far as food products from Africa go, I have only had coffee from Ethiopia, Burundi, and Rwanda. All of it is generally delicious and I prefer it to South American or East Asian coffee.
I will be going to Morocco for a week in June though, to various famous/well known cities, and I am super excited for the food.

There's a casual African restaurant/take-out place near where I live. They took over a pizza place that closed, so it's a small, cozy, hole-in-the-wall kind of deal.
It's owned by two brothers and one of their wives, all from Ghana, so they specialize in West African cuisine. They're some of the friendliest people I've ever met, desu. When it's your first time there, they give you a plate full of free samples of some of the more popular dishes and answer any questions you might have. Plus it's all fucking delicious.
I've had Jollof rice, black-eyed peas with chicken, spinach stew, cabbage, curried goat, and red-red.
It's all damn delicious, now I'm craving it. Gonna have to stop there soon.

Sure it does. A lot of the ingredients were brought from Africa during the slave era. A massive number of the plants grown in the Southern US were not native but rather were brought from Africa. So were the cooking techniques.

My spice palette is almost completely central and southern Ethiopian/ coastal Yemeni with Northern Indian influences. Most foods I prepare are done in a very Ethiopian way with a liberal usage of butters, seasoned oils and onions and really it's just something I'm most confident in.
Grains of paradise, red pepper, timiz, cumin, coriander, cinnamon, clove, fennel etc... With ginger juice and my own modifications using fish sauces, locust paste, smen, tomato paste and gelatinous bone broths.
Lots of simmering in clay or cast iron pots.
Right now I'm making a low protein diet plan after gaining too much muscle helping my grandmother build a garden (5% of my calories coming from protein) so it's tibs of mushrooms and wots of African eggplant, cabbage/potato/carrot, avocado; gomen, sour cream instead of ayib, with some injera.
The issue now is trying to cut 3 good meals 500 calories each and it be substantial.

All major Ethiopian wot recipes begin with extremely finely chopped shallots (I tend to just grate them), I then add niter kibbeh/seasoned oil followed by a cooking down period using a dash of baking soda to quicken caramelizing (it must break down almost into a paste so who wants to wait and stir forever when baking soda quickens it) and a half teaspoon of fish sauce + two table spoons of ginger juice freshly ground.
This must be dark like red wine from reduction but not burnt, it's a process without the baking soda. It adds body, mellow sweetness and a baseline savory taste that makes the "meat" of the dish.
I then add quartered mushrooms cooked for five minutes finished off with basically a gram marsala.
Habesha cuisine doesn't often have "secret" ingredients so on the surface it looks really simple but it's all in the building and layering of flavors through reductions. The use of fish sauces, bone broths and other things are just personal preferences I appreciate but used sparingly like devils dung so it doesn't overpower.
Somali food to me is rather simplistic. It's basic Yemeni, Habesha and Indian food, the only point of going to a Somali market is for spices or canjero.
