So who else is doing kielbasa this Easter?
I've got mine! It's a slightly different recipe from their usual smoked kielbasa - leaner and a different spice mix. I never heard of this tradition before I moved here but apparently it's huge among Polish folks.

The smoked Kielbasa is sliced and served cold at a traditional Easter breakfast. All the people growing up with refugee parents from Eastern Europe would have this for breakfast. In our Family there was an array of pastries like Nut and poppyseed cake, Homemade bread, Paska, Bobka, Egg cheese, Baked ham and so on. Family and friends would stop over throughout Easter morning for breakfast. I do remember a horseradish and mustard on the table.

My Polish neighbor just gave me half a kielbasa he made himself because he smoked up a whole bunch of meat (including a large ham) for Easter.

I never heard of kielbasa on Easter until my great-grandmother died and Easter dinner shifted to my grandmother's house. Her SIL's (my uncle) parents were from Hungary and he insisted that we have kielbasa, along with everything else. I think the only ones that ate a piece were him and my father.
