My first apprentice gig was to a pastry chef in a place that was only open for breakfast and lunch. I'd go in at 4 in the morning to prep the breakfast pastries and waffle batter, which was yeasted.
Anyway, we always served our waffles with housemade yogurt and fresh fruit (and/or local honey and butter). And that's still my favorite way to eat them today. Nothing beats it. Pancakes can go fuck themselves.

I liked waffles, but now it's usually neither since whole wheat waffles are always a sticky mess without unhealthy lubricants, and the high cooking temperatures make it way more carcinogenic than it needs to be.
I went to a vegan waffle party last year, and one of the irons was this shit that has the texture of a pancake. I took one instead of waiting a few minutes for real waffles. I'm won't be attending the annual waffle party again because 100% white waffles are shit.
