You can make excellent pancakes with sourdough starter as well. Just mix the starter with flour, egg, milk, sugar and a pinch of salt, mix it up and let it sit for an hour or two for the yeast to feed and volume to expand, then onto the griddle it goes.

OP, I like to sprinkle pecans or blueberries. Sometimes I mix in bits of ripe banana. These are american favorites.
When you get good at it, the expertise is knowing when to flip a pancake. You will see bubbles all over, then it breaks the surface about 1/4 in near edges, and then you see the edges lose their wet batter sheen right up the spot where the bubbles are breaking. They take about 2/3rs of cooking 1st side, last 1/3 is after flip.

1 ½ cups flour
1 tbsp. baking powder
½ tsp. salt
1 tbsp. sugar
1 ¼ cup milk
1 egg
3 tbsp. butter
1 tsp. vanilla extract
Directions:
1) Sift flour, baking powder, salt and sugar into a large bowl. Add milk, egg, butter and vanilla extract. Beat well with a fork or wire whisk.
2) Cook over medium-high, ~1/4 cup of batter per pancake.
