I'm not going to give you molecular gastronomy portions or 1,000 ingredients, although since it's a tasting menu it'd be a lesser serving size; good ingredients, good food, good booze, good price. And no memes

1: Fresh bluegill or bowfin roe on toast with green pea puree.

2: Sorghum glazed pork belly

3: Broiled wood duck with madeira baste

4: Shrimp and grits with a little Conecuh sausage, heirloom tomato and garlic

5: Blue hickory grilled whitetail tenderloin with rosemary and thyme.

6: Channel catfish or bluegill broiled with paprika and asian slaw

7: Grape hull pie: a cobbler made of the thick discarded skins of muscatine grapes, accompanied with vanilla ice cream and cold-brewed coffee with a touch of chickory.

ETC: Dunno if there's often bread on the table at restaurants that do a tasting menu, but I'd go with a very light, airy cornbread with a fois gras butter. Those two things go insanely well together.

That's not a carefully sequenced menu, but it's where I'd start.
