Savory Pantry Cakes with Secret Sauce
In a bowl combine 1 cup sauerkraut, hummus, kombucha, flour and milk each and stir until pancake batter consistency. Then open one can of peaches and strain peach juice into bowl (keep for later).
Put non stick skillet on high and let it get nice and hot. Pour 4tblsp olive oil in the pan and ladle out the mixture into the pan until the bottom is covered about half an inch thick.
Let cook for about 5 minutes then pour strained peaches into center and spread evenly. Season with liberal amounts of salt and pepper then fold the pancake over the filling like an omelette.
Next in a small bowl mix 1cup feta, .5cup heavy cream, 2tblsp hoisin and 1 pickle (finely diced) to make the secret sauce. Microwave for 3 minutes while pancake is finishing up.
Top pancake with secret sauce, then garnish with saltines and WALAH! Savory pantry cakes with a delish secret sauce.
