tongue is pretty yummy. i think that there are a lot of other parts of cow that are also yummy. personally, being half-peruvian, i've always enjoyed anticuchos, or beef hearts on a stick, especially when they have just the right spice and flavor. sweetbreads and tripe can be yummy in certain circumstances too!

Actually just had my first cow tongue a few days ago. Threw it in the slow cooker with a few spices and beef broth for 8hrs
It was slightly challenging, mentally, but goddamn the texture was akin to the most tender tenderloin I've ever had. Would do again.
Ribeye is still my favorite though

Tongue is a tough muscle so you can't cook it quickly like a steak or it would be tough as an old boot. You need a low and slow cooking method. Smoked is one common method. Another would be to braise it in stock or wine with aromatic vegetables.
