Been thinking of trying out some recipes: the beauty of stuff like this is that ALL the ingredients are probably already in your pantry, so you won't need to go chasing anything exotic since the most wild it gets is cheesecloth or salted meats.

Frugal gourmet did quite a few traditional recipe history shows, esp when he was doing his companion to Three Ancient Cuisines.
Heston did some old English recipes episodes ripped right out of medieval cookery, incl a predecessor to butter beer. They're entertaining even if you don't make any of the dishes.
Two Fat Ladies cooked all homey food with good banter and historical/regional aspects to that.
There's a few episodes of Good Eats when Alton consults the food historian.
Put in "colonial food" into video searches and you'll find a ton, a metric tonne at that.

Kosher salt is salt in flake form. Cooks like it because the flaky shape sticks to the food well.

The reason it's called "kosher" is because one of its common uses is the process of koshering meat, which is using the salt to draw out excess fluids since blood is impermissible to practicing Jews. But chemically it's sodium chloride just like any other table salt. The only difference is the shape.
