I'm starting slow cooked corned beef tonight so it will be ready for corned beef and eggs at brunch.
Thinking ahead towards leftovers, already. Not my usual MO.
I've done a few things with the leftovers before now: sandwiches of course, some amazing sourdough corned beef pancakes, hash, red (beet) hash, stir fries, corned beef pot pie....
Anyone here ever done a corned beef stroganoff? Something else?

I made corned beef tacos once with leftovers.
I fried up some chopped onion, chopped up leftover corned beef, cabbage and carrots, put it in some corn tortillas that I browned a bit in a pan and then put some horseradish sour cream sauce I made on top.
They were pretty tasty.

Here's the recipe verbatim from 100 Recipes from the Idaho Department of Fish and Game
Basic Recipe - Sourdough Hotcakes
2 C sourdough starter
2 T sugar
4 T oil
1 egg
1/2 t salt
Dump sugar, oil and egg into the sourdough. Mix well.
1 scant t soda; full t if starter is real sour
Add soda last, when ready for batter to hit the griddle. Dilute soda in 1 T of warm water.
Fold gently into sourdough. Do Not Beat. Notice deep hollow tone as sourdough fills with bubbles and doubles bulk.
Bake on hot griddle. Serve in hot plates.

Corned Beef Sourdough
To basic recipe, add:
1 C corned beef, mashed into small pieces
1 t Worcestershire sauce
Mix meat into batter well before adding the soda. Bake slowly until golden brown.
Serve with scrambled eggs or fried sauerkraut.
To reheat, brush each sourdough with butter and place on tray. Pop into oven and heat thru.
Wonderful for camp menu.
