Hey, as a lactose intolerant person, how can I approximate milk without shilling out for bullshit almond/soy milk? I'm not really worried about flavour, though I want roughly the same fat/protein/carbohydrate profile. I refuse to buy overpriced bean water.

Lactose free milk is available in my city. Made by big brands so I'd assume it's available in most major cities.
All they do is add an enzyme to convert the lactose into a sugar, hence the sweeter taste. Perfect for coffee and breakfast ceareals, not so great for mash potatoes or carbonara.
If you wanted to experiment, you could approximate 1% milk content by emulsifying a tablespoon of oil with an egg yolk, adding two tablespoons of sugar and watering it down to get a full pint. It'd probably be disgusting though.

OP here. If it wasn't such a cheat (almond content being very minimal), I'd definitely use it.
I've made my own before, and it was pretty damn good. Much more viscous and flavourful. Too bad it went rancid in less than 24 hours.

Have you tried Kefir? It's similar to yoghurt but the cultures eat far more of the lactose.

Organic Almond Milk
Simple Homemade Almond Milk Recipe

Ingredients
1 cup raw organic sprouted almonds - soaked overnight (this step reduces the level of phytates- here is a good tutorial)
4 cups pure filtered water
vanilla bean (optional)
dates, honey or stevia (optional)
Instructions
Soak almonds for at least 12 hours in pure water with ½ tsp sea salt. This is an important step as it breaks down the phytic acid and enzyme inhibitors and cultures beneficial enzymes in the almonds. (side note: soaking nuts should be done before eating them as well. Soak nuts in salt water for 12 hours, rinse them, and dry in oven on lowest heat. See tutorial above.)
Rinse almonds well. Mix almonds with pure water in blender or Vitamix.
Blend several minutes until smooth and creamy. (Warning: mixture will expand some, so make sure your blender is not full before starting it)
Strain mixture into a large bowl through a sprout bag, cheese cloth or kitchen towel.
Put mixture back into blender with vanilla, soaked dates, or other sweetener.
Pour into glass jar or pitcher and store in fridge for up to one week.
Notes
Save the pulp of the almonds, put on cookie sheet and dehydrate in oven on lowest heat until completely dry. Run through blender or food processor to make almond flour, which can be used in recipes in place of flour.

You can make your own soy milk, it's pretty simple.
1. Soak some soybeans in water overnight
2. Put them in the blender with more water
3. Blend until smooth
4. Pour into cheese cloth over a pot and squeeze
5. Return mush to blender with more water and start again from 3
6. Bring pot to a low boil and skim off the foam
7. Boil until desired thickness
8. Add vanilla/sweetener/salt/etc to taste
