It's just a fad. Maybe 0.5% of the population or something like that has coeliac disease (can't eat gluten) but other than that, gluten free is bullshit.

Human beings have been eating gluten since the literal dawn of civilization. I'm fact since the first domesticated crops were barley and wheat and farming is the hallmark for the beginning of a civilization you could say that gluten is the reason the modern world exists.

Gluten is only bad for celiacs, some IBS sufferers and certain blood types/mutations. Otherwise, there's nothing wrong with it.
