What is /ck/'s favorite cajun food? I happen to be a seafood jambalaya man myself.

Jambalaya is creole, not cajun.
Chicken and sausage gumbo.
>>7386257
pretty much the only difference is that creole is "city food" while cajun is "country food" they use like almost the same ingredients and styles.
>>7386302
There is no difference.

that's what I'm saying.
I'm on vacation for the next two and a half weeks in NOLA. My list of dishes to seek out are:
red beans and dirty rice
cat po'boy
oyster po'boy
jambalaya
gumbo
muffaletta sandwich
fried chicken from a convenience store in the 7th or 9th ward
Anything important that I'm missing?

Boudin balls. Great bar food.
>>7386352
those look great, what's in them?
>>7386415
Varies between recipes. Almost always pork and rice, some times those are mixed with chicken liver. Some also have shrimp in them. Almost always a medley of spices, almost always fried.
>>7386415
Rice and chicken liver.

Red beans and rice is a different dish from dirty rice, so try both.
Crawfish are in season.
>>7386425
Good to know on both counts, thanks.
>>7386425
god I would kill for some good crawfish right now, I'm up in chicago so almost no good craws up here.
Etouffee for sure.
That's my go-to
Redfish with a cajun seafood sauce is next, followed by seafood crepes, followed by courtbouillion.

Sounds awesome

Can I make jambalaya with north african sausage, guanciale and argentinian choritzo?
Gumbo or etouffee with shrimp.
Best I had was near Port Arthur south of I-10.
