my favorite vegetable ramen so far consists of a mirepoix replacing celery with okra and onions with green onion (green oinion is also used to garnish), black eyed peas, and tofu. mainly because buying all these items in bulk is cheap, and the entire thing very sustaining. the beans could be excluded, but black eyed peas and okra thicken vegetable stocks in very unique ways, turning it into a veritable aquavit
