I want to start cooking more.
What are essentials for the kitchen?
I'm not talking equipment, I mean stuff like salt and pepper.
tl;dr what are some things everyone should have in their kitchen

It'll be used in a majority of your everything. That'll be a $25 copay. You'll get the rest of the bill once I have your insurance billed.

salt (table salt and kosher salt), sugar peppercorns, mustard seeds, other spices, dried herbs, vegetable oil for frying (not fucking canola, you have alcohol if you want to kill your liver), vinegar, cooking wine, coffee, cocoa

beans&peas (dry or canned), rice, wheat flour, corn meal
milk, butter, cream, cheese
eggs
whatever vegetables are in season - i.e. dirt cheap at the store or market. don't be picky, most anything can be made into good food

Always keep some onions and garlic around, it'll put flavour into most things. Also try to find a herb or spice that you like putting in most things. For me it's rosemary, for others in my family it's thyme. You don't have to put it in everything, but it's nice to have some way to salvage a meal that turned out badly.
