I'm trying to get better at cooking so today I'm making chilli.
Will post pics in the process.
Feel free to insult my cooking techniques. Criticism and advice appreciated.
Chopped the veggies
Heat up the oil and start cooking the onion
Add pepper and garlic and cook some more
Add seasoning - chilli powder, smoked paprika and ground cumin
Add the meat
Brown it
Pour in beef stock
Add chopped tomatoes
Add some more seasoning - salt, black pepper, dried marjoram
Tomato puree
Adding beans
Let in simmer for another ~10 minutes

Could use something easy to make desu.

toast the peppers whole, peel and chop up alongside some re-hydrated dried chillies-I like smoky chipotle and ancho
lightly caramelise the onions like you would for a curry
toast and grind your own cumin, coriander seeds and cinnamon
use cubes of beef rolled in flour and some pork scraps or chorizo- extract some of that godly oil in the onion stage
if you feel like it roast/toast some tomatoes whole with the peppers until they are scorched and split open
whole dried oregano is a good herb
beans are great and soak up flavour/improve the economy of the dish. try pinto
good chilli is messy and takes a while to make and some less common ingredients but you can freeze a few litres alone or stuff some burritos to microwave for a good snack
I would eat what you cooked though, looks pretty good. especially as you are probably somewhere north and cold
