Reminds of the time I put two rectangular sheets side by side when baking pizza. By completely filling the rack area of the oven it created a cool zone on top. So the oven just kept the burner on full time since the top wasn't rising to the set temp. Burned the shit out of the crust.

I get my pizza stone wet when washing it, sometimes I run it under the tap. Never had any problems, I just leave it on 150 degrees for an hour so all the water evaporates, then put it up to about 250 to cook the pizza

Without that drying step you do its a high risk of cracking.

Water is bad for the stones, they dont need to be washed anyway. Just brush off the cornmeal and scrape away any burned cheese. Dont worry about oils that soak in, its normal.

If it got really dirty just burn it off at high temps.

Try to be more careful. The goal is to keep the pizza toppings on the Pizza and the dough on the stone.

Use a Pizza peel and cornmeal to help it slide. Its like a Shuffle board. You use the cornmeal as little ball bearings.

Once you figure the peel out you wont get the stone dirty because you be fucking up when you put the pizza on the hot stone.

A shitty stone that costs $15 and will break in two after three uses is still infinitely better than any kind of pan. Just push that motherfucker together and go. Protip: use it on the very top rack and preheat the oven at max temp for an hour; then run it on broiler for 15 minutes or so to get it even hotter.

A baking steel is what you need, though. I have a 1/2 inch steel, and frankly it is too much-- there is too much heat transfer: it will burn the bottom if I don't do certain things with it. The 3/8 and 1/4 are probably better, truth be told.

The best way to bake a pizza in a home oven is a Steel and a stone, or two steels. Start with the steel (the thickest one) on the top rack and start the broiler; launch the pizza and let the broiler broil it for about 30 seconds. Then turn off the broiler and just put the oven back to full regular bake, letting the pizza go at the top for another minute.

Then switch the pizza to the other steel/stone (steel in the middle rack or stone on the bottom one) for another 4-5 minutes or so, turning it 180 degrees after a couple minutes. I've been at this 2 or 3 years now, and that's the best way I've found to make a pizza in a home oven.

Works well for cheap though can crack a bit easier and shift more when you try to move around the pizza or whatever you're making.
They can also just be useful to add in for thermal mass even if you don't put anything on them and they can be wrapped in tinfoil for easier clean-up especially with breaks.

But yeah with most home ovens even maxing out the heat wont work as well as a real pizza oven and could damage the oven.
