Here is some nigiri I made just a few minutes ago also. Big eye tuna with miso mayo made from scratch and salmon with serano and home made Ponzu. This is my first time doing most of this stuff and I'm really happy with how it's turning out.

Also in case anyone is curious, the types of fish are toro, otoro, salmon, hamachi, big eye tuna, and some other cuts of bluefin. The shrimp are some huge Texas gulf shrimp. I put a mixture of sesame and chili oil on one row of the hamachi and ponzu on the other.

I've been eating sushi since I was ten and not once gotten sick by it. I've even had it in the Midwest, despite my skepticism of land-locked states being able to make good sushi, I had the impulse. Totally fine... Not bad sushi, either.

If you're actually being made sick from raw fish that was intended to be eaten raw in this day and age I'd seriously start questioning my trust in who's selling it to me and what it actually is...

Being picky, it's lacking something in sharp edges, gloss and convenient layout that I can't quite put my finger on. I assume that comes from working with pre cut filets that have been in transit rather than a whole fish you can trim fresh though.
