I wouldn't say this thread is so much full of pussies, as it is full of overcautious, misinformed absolutists.
I'm a cook at a big brewpub restaurant. We serve hundreds of burgers a day - half pound beef and buffalo patties. They're grass-fed, high end patties, but they come in pre-shaped and frozen. We ask the customer how they'd like it cooked, and I'd say 60% order medium, 15% order med-rare, 15% med-well, 5% rare, and 5% well-done. The overwhelming majority of our customers eat "pink burgers" because they TASTE BETTER THAT WAY.

These aren't people "beating the odds." No one has ever complained about food poisoning.

You can't assume that bacteria is ALWAYS present in ALL ground meats. Most of us cooks eat them rare, and no one on staff eats them well-done since our Mexican dishwasher quit.

This is how it is outside of your little bubble world. If ground beef not cooked well-done was as dangerous to eat as you think it is, the customers would have to sign waivers.

p.s. We'll cook your pork porterhouse as rare as you want, too!

Minced meat should never be rare, medium rare if you know the meat is really fresh. Minced meat means that air gets all over and thus speeds up the process of bacteria and stuff. Only real meat should have rare parts.

I find the texture of burger cooked below medium to be an unpleasant eating experience. It yields to chewing too easily, and resembles too much the paste that is uncooked ground meat. Medium burger is juicy taste, with toothsome consistency. It feels correct in the mouth. Above medium is TOO chewy.
