Because it's a pretty solid product and it's still aged in barrels for like a year or two for what I know. There's still cheap hot sauces that are good but it's hard to mimic the tabasco flavor.

Barrel Aging actually has properties. Other companies don't have the established means to barrel age the same way Mc.ilhenny can.

Generic brand Tabasco producers dont use the same seeds, its a certain type that Mc.Ilhenny grows for seeds and ships to their farms. And they dont use old Jack Daniels barrels to age them in, but honestly i dont think where the barrels come from make much difference, they plane the inside of the barrels to remove the char and then clean them to get rid of any lingering alcohol.

They just don't use the same quality raw material and they water it down a lot more. Got some kroger hot sauce. It ain't awful, but you wouldn't write home about it. Thankfully a good chunk of other store brands are good. Kroger makes a pretty thick chicken noodle broth that I'm crazy about.
