Never heard of Greek coleslaw. Is it just cabbage dressed in oil and vinegar? Or is it subbing out yogurt for mayo?

Regardless once raw greens are dressed there's a clocking on how long they're still good to eat. Cabbage lasts longer than most, but I wouldn't eat yesterday's coleslaw tomorrow.

Looks more like a side dish than a sandwich topping, unless you were making souvlaki or kebabs. Maybe felafel?
