I began my vegetarian diet with a veggie burger dinner.
I had eggplant (as the patty), tomato, mushroom, red onions, baby spinach, red pepper flakes and a dash of cayenne pepper.
Should have taken a picture but I had some super tastey authentic tacos from a small mexican restaurant.
