Hey guys, so tonight I want to make some home fries to go with dinner. I want to just bake them in my oven because I'm going to be using the stove top for other things. I want to add in onions and peppers with them too.

My question is, should I microwave the potatoes a bit before hand to start softening them or just throw them in the bowl with my peppers and onions and oil and season and then stick them on a sheet and bake?

I'm making a good amount for everyone in the house so that's another reason I don't want to do it in a skillet.

Also, 350 for a little over and hour maybe? And then move the rack up because I like my home fries crispy. Thanks!!

If you're baking it in the oven, they're not fries anymore, just roasted potatoes.

If you were doing them in a skillet, parboil them until they're almost done first.

Yeah parboil if you want, microwave will also do the trick. It makes them cook faster with a softer inside. Lightly shake them in a colander right before you roast them, it will increase the surface area giving you a crispy skin. Squash them slightly half way through to make them crispier. You could add some rosemary too, and a little bit of acid i.e. vinegar or lemon gives them a nice texture. The thicker the fat you use, the crunchier they should be, so you could consider butter.

The key to crispiness is to cut up the potatoes and parboil them, drain, then give them a good shaking to rough up the outsides. Then put in your peppers and onions and bake
