What are some easy, homemade soups I can make if I don't own a mixer? just chop ingredients, throw them into a casserole and let it simmer for 10-30 minutes?

You need more then 10-30 minutes usually to develop flavor... This is good with an unblended base...

That's more or less the normal way people make soups. I don't know why people get all crazy about blending everything up into a mush. But yeah, it takes time.
Use a good stock, from the store or even better, one you make yourself. It makes a big difference. But as long as you season it well, it should be fine. Start out with chicken and then move your way to beef. Making beef stock is a little more tricky than chicken because the marrow leaves a bitter taste if you overcook it too much so you'll have to strain it out. Soups and stews are more or less in the same family. Make some chicken soup, gumbo, jambalaya, chili, etc. Should be good.
