Want to try sardines. I don't think I've ever had them before and I'm not a huge fan of fish (apart from tuna), but I like anchovies and it seems like sardines are in the same ballpark, in addition to being healthy and cheap.

Any thoughts? I'm thinking about just starting with canned sardines on some melba toasts. I guess I just eat the contents of the can, I don't need to skin/debone anything? Total sardine virgin here.

If you've never had sardines, I recommend buying the boneless, skinless sardines to start with. They're just more like fillets (their whole, but without bones and skin). That way you'll get to love the taste, and then you can move on to the whole sardines and you won't care about the tiny bones (which you can eat as well, they're soft from the canning process).

I make a great pasta topping with sardines. Just saute some shallots or onion in olive oil or the oil from the can of sardines, then add some minced garlic and the sardines and mash the sardines to small bits while they saute. Once the garlic and fish is fragrant, add some coarse breadcrumbs, lemon zest and juice, and minced parsley. Toss all that with some linguine or other long skinny pasta, and top with some grated parmesan or romano. It's delicious.

Pretty much, this brand was flaky like tuna. It is really good though, I'm going to save the rest for tomorrow when I can get some cream cheese. It is not a strong fish taste so if you like tuna you'd like herring.

If you throw them in hot oil and stir they completely dissolve, including the bones. Great for fried rice or pasta.

This seems like an appropriate thread.

I've got some frozen pizza and want to try them with anchovies.
What brand (in America) should I look for? Are they already cooked before being put in the can?
Can I just pt some on the pizza before heating it up in the oven?
Bones safe to eat?
Do they come with the head and eyeballs and shit? (type of brand might be helpful since I don't want to eat that)

Not necessary. Don't do this OP. Just eat them. Get a few tins as they come in different liquids (oil, water, mustard, hot sauce).

I eat them straight out of the can with saltines and Louisiana hot sauce. Love eating the spines

I eat mine on saltines with mustard and occasionally hot sauce if they're not in spicy oil.

I like to put them on the pizza right before I eat it on the plate. I also enjoy just pouring the oil on the slice.

The reason i don't like them baked into the pizza is when I've had them that way all I taste is anchovies.

Double layer are smaller, and don't fall apart as easy as regular sardines. They also have a milder flavor and the bones/tails are more pleasant to eat.

They just have a "hand selected and packed" feel to them, and can also be eaten in one bite.

In Britain they are commonly:
Sunflower oil
Olive oil
Brine
or tomato sauce.
It also annoys me that people on /ck/ seem to think they taste like Herring (maybe in America they do but not anywhere else)

I don't buy the tins in sauce but after draining the oil/brine I like to throw them on a pile of flavoured Ramen type noodles, for a quick and easy meal.

My favorite brand of the few that I've tried is Cento, about $2.60 a tin. Skinless/boneless which is a bit more approachable for some people, tastes great, and they're also packed really tight so you're not getting a ton of olive oil. I've also tried King Oscar and Crown Prince which are both more expensive. The fish were smaller, milder, and the texture much softer (almost melt in your mouth). Not bad, just different. I've also tried a couple of the Trader Joe's varieties. Those suckers were huge and the cans had like a gallon of olive oil which I don't find useful.

Try them on some crackers with fresh-squeezed lemon juice and a splash of Tobasco (I've tried with regular and habanero, both excellent).
