What's wrong with good old fashioned russet potatoes? It seems like everything uses sweet potatoes instead these days.
Nothing is wrong with them. People think the type of potatoes you use to fry is the health issue and not the actual frying

my family is potato farmers and agree unanimously that boiled, skin on, with butter salt and pepper is the best way to eat them
