i like to can beans because dry beans are a pain in the ass to prepare and canning 6 or 7 pints isn't a lot of EXTRA work than if you were going to just make enough for a meal.. and 6 or 7 pints is about $2 worth of dry beans.. it's literally 5x cheaper.. and you don't have to lug around heavy salty store bought cans

fresh produce is also key.. buy a bushel of tomatoes in august for $12 and have enough to last the year

also pie pumpkins and squash.. other things that can be a pain in the ass to prepare but if you feel like canning one day you can do a few and then make last minute soup that you don't have to bake a squash for 3 hours

If my friends want more I organize big canning week-ends. They throw in money or ingredients and they leave with jars.

my canned food is usually just produce, meat and beans.. no salt, sugar, acid, etc. added

i buy what i need to last me the year

if someone expresses interest in my preserves i might offer them one or two but i generally like to keep them for myself.. it's not like they're going to go bad

i'm also a decent baker and i find baked goods sit well at a gathering of people as opposed to a jar of cold, unprepared, canned tomatos

I would'nt have storage space for it. It's not too bad, I have plenty of high acid food I can make.

And I've got a good pattern for tomatoes... Skin, cut, simmer, pack, stick in their waterbath for 35 minutes... The processing time allows me to do other stuff at the same time (laundry, watch tv, browse 4chan). Nice little rythm.
