When's the last time you had eggplant in a sandwich?

Pic related. Eggplant, roasted red pepper, and mozzarella on a pizza-like bread. So good.

In honesty without being a /ck/ faggy fag, I have never had mushy eggplant. Some times it has seemed like it's actually too hard for what I have used it for so I don't really understand what you are doing to your eggplant.
