The issue with the video wasn't putting the food in the cans (though he probably undercooked the shit out of his chili); it was that he undercooked it when canning. There's actual government-provided food safety guidelines for home canners, and Jack drastically undercooked his food in the pressure cooker, leaving it still suitable for botulism spores and just warm enough (didn't get out of the danger zone) to fuck up someone's next meal.
