I mean that if you whipped up the eggs, dropped them into hot oil, rapidly stirred them for a few seconds, dropped the vegetables on when it was nearly cooked through, then folded it over, you'd have a better end result with almost as little effort.

This is true, always beat the eggs. Makes it fluffier and gives it a more even texture.
Although one might argue that having the egg yolks "kind of" separated from the egg whites makes for some preferred taste as well.

If you were to fry off the peppers, then added egg, it would definitely taste better as the flavour of the peppers would permeate through the egg from the oil.
