Yes, usually a trimmed brisket, or cheap roast. I cut it with the grain so its really chewy....I don't like tender beef jerky.

Old Trapper. I personally like their hot style, but everything is good.
I also make my own. I blended Tobasco, a pear, and a little mollassess, red pepper flakes. I then cut up a lean but roast into strips. Currently marinating in the fridge. Haven't tried this marinade before - looking forward to how it tastes. The best tasting I've made is just marinating in Beef Bulgogi sauce

Just made some of my own jerky for the first time in a while. Used an inside round roast. I freeze it so it's not mushy, and cut it every which way. With the grain, against the grain, doesn't matter to me.
Season it with whatever I feel like at the time, but always Lee & Perrins, Soy Sauce, salt, pepper, and Liquid Smoke. This time I threw in some Cholula and Tabasco, came out with a nice little bit of bite.
Do you use a dehydrator for the entire process? I like to keep it in the dehydrator for a few hours, but finish it off in the oven on low once it's dry enough. I've done it all the way through in the dehydrator and found it becomes too brittle sometimes. Maybe I just overdried it.
