Slow cookers are fine, but I use the oven.
I do the same thing you're doing, except the meat goes into the oven in the roasting pan at like 475F and browns first.
Then onion/garlic/liquids are thrown in, lid on, ~300F for 8 hours.
alright, gonna try and find the inbetween of cooking it on low and high, gon do 2 hours low, 2 hours high and then 2 more on low, as opposed to either 8 on low or 4 on high
