This, seriously.
I use HEB's queso blanco Easy Melt, and I generally use the 'hot' version of whatever chiles+tomatoes can.
From there, add cumin and paprika, as well as a little bit of your favorite salsa.
Melt it down and you're good.

This is alright, but you can't beat a dip that uses real queso cheese.
half nacho cheese and half cheddar or velveeta and cream cheese. Onions, red and green peppers, Jalapenos, breakfast sausage.
Chile con Queso
2 tablespoons canola oil
1/2 yellow onion, diced
1 tomato, diced
1 (7 ounce) can diced green chiles
1/2 cup shredded queso asadero
1/4 cup shredded monterey jack
1/4 cup milk
salt and black pepper, to taste
Heat the oil in a skillet and fry the onions until soft. Add the tomatoes and chiles. Cook until heated through, then add milk and cheeses. Stir until melted and hot. Serve with tortilla chips.
