dark chocolate: combine with very sweet ingredients such as cookies, cake, fruit, nougat, etc
milk chocolate: eaten by itself, or combined with non-sweet ingredients like nuts
white chocolate: used more for its texture/mouthfeel than flavor. never eat this melted, you want the cocoa butter to be solid.
