Make millionkalkun. Basically millionbof, but with turkey and turkey/chicken stock/broth instead of beef and beef stock/broth.

Millionbof is a Danish gravy with bits of ground beef and minced onion in it finished with fresh dill or parsley that's served over mashed potatoes or rice or pasta or something else carb-y.

Just cook it the same as you would any strongly seasoned dish like chili or tacos and you will barely taste any different. Turkey smoked sausage is good too I've made it for lots of people who refused to believe it was turkey.
