So I have a question and I'm not sure if anyone can answer but googling didn't yield anything.

Why does bread in Asia taste like shit? I lived in Japan for 6 months and Korean for 2 years now, and nothing even comes close to bread I had in the UK/Europe/US.

It's always more dense, the crust is never crusty but chewy, it lacks flavour, doesn't toast well, and just generally awful.

Is it the flour? Is it the water? Does living in gookville change my palate in some way? What is it?

I've tried fast food, pizza, all the way up to expensive artisan bread and it doesn't compare.

Their bread culture comes from missionaries, tempura is the same batter recipe for Jesus wafers.

Also, I like their bread, it's thick and chewy. Good for making stuffed sandwiches, not good for much else.
>>
>>7180699
way to generalize, cocksucker. Vietnamese bread is baller. I'd guess that most the Japanese/Korean is probably some bagged shit from a convience store.

It's probably because they haven't mastered the techniques that western culture has since we've been gnoshing on bread for thousands of years or sumthin
>>
>>7180699
Asia is a rice continent you fucking dolt.
>>
>>7180712
East Asia. Happy?

And no I'm talking about all breads I have tried here bar none. I'm asking about what might be the reason.

>>7180713
Literally no relevance to my post whatsoever unless you can explain how rice growing in fields affects bread being baked in an oven.
>>
>>7180712
>Vietnamese bread is baller
Yeah, because it was taken over by the French.
>>
>>7180718
It's because bread was not the grain of choice in Asian culture, that's why it's shit.
>>
>>7180718
They had no bread becaus rice can't be made into bread until the 1700's
>>
>>7180722
>>7180723
But how does that affect bread being made today? I understand that for cultural reasons alot of the bread is shit but that cannot explain why ALL of the bread is shit, which is why I suspect there must be something in the ingredients/water making a difference.
>>
>>7180723
Wheat was introduced to Asia over 4 thousand years ago. They somehow mastered noodles but never cared for bread.
>>
>>7180725
No that's the only reason, it's a regional thing, now they're used to that taste.
>>
>>7180707
>Good for making stuffed sandwiches
This.
>>
>>7180727
>now they're used to that taste.

Okay so what are they doing in the recipe to make the taste different?
>>
>>7180725
They have access to any kind of flour they want these days and water wouldn't matter very much unless they add something seriously fucked up to it.

I think they just prefer their bread that way honestly
>>
>>7180718
I don't know what East Asia means. Is that just Korea/Japan? I'll admit tho I haven't had many baked goods from there.

As I said, I'm sure it comes down to the techniques. You probably know the basics of how to make bread. I'm making assumptions but many people probably own either a small oven or possibly no oven. They have more of a convience culture, that's why they have the best bread machines. Making really good bread is an art and the techniques have to be learned, you can't just grab flour, yeast, and water and turn out bread. The only Asian country that's well known for good bread is Vietnam and that's coz the French influenced their cuisine so much.

It's the same reason that American chocolate tastes like shit to people in the uk.
It's cultural conditioning.

Why does rice in America taste like shit? I lived in Washington for 6 months and Utah for 2 years now, and nothing even comes close to rice I had in China/Vietnam/Japan.

It's always more dense, the grain is never fluffy but crusty, it lacks flavor, doesn't steam well, and just generally awful.

Is it the rice? Is it the water? Does living in whitebread change my palate in some way? What is it?

I've tried takeout, brown rice, all the way up to expensive artisan rice and it doesn't compare.
>>
>>7180735
But rice is exactly the same idiot.
>>
>>7180734
American chocolate tastes like shit to people in America too ;_;

There are a few exceptions though. Just like with cheese here, the vast majority is shit but a few small companies know what they're doing.

No they had Barley not wheat, wheat was in Russia, albeit eastern Russia.
>>
>>7180735
American rice is top notch, the most common rice in Asia is CalRose rice which a special breed grown in California.
>>
>>7180729
It's derived from flavorless Jesus crackers, the foundation is the problem.

No, they had wheat along the silk road and deep into China as early as 2500 BC. Barley and wheat were introduced at roughly the same time.

Why is asian bread is soft anyway? Is it true they lack the enzymes to properly break down tougher, western-style bread?
>>

Bread in Asia seems to be considered a dessert type thing. Rice and noodles are the staple foods, not bread and potatoes. There's no place for bread in savoury dishes because of this, so bread just became a popular sweet snack instead, like a cake.

The other annoying thing is that even though they like sweet baked things, they almost never put chocolate with them. It's always red bean paste or dried fruit. Not much jam either.

The attitude to bread is really different. I remember seeing someone eating what appeared to be a plain loaf of bread and wondering why he was bread with nothing on it. Later on I tried some of that kind of bread and realised that it's sweet enough not to require anything with it. Still a pretty bland snack though.

In some bakeries you can find freshly made baguettes. Those are pretty much the only 'normal' bread I managed to find myself. Supermarkets appear to only have sweet bread.

You should try pandesal from the philippines. They toast well. Great for sliders too.
>>
There are some nations in Asia with good bread but they're either located in SW Asia (Syria etc...) or have a strong colonial influence (Vietnam).

Yes. That particular type of dumpling dough is the most like bread in terms of texture.

they suck

they slap whipped cream on a hotdog bun and call it "pastry"
>>

>paris baguettes in korea

paris baguette and tour les jours (whatever the fucking name is) are some of the worst places for bread.

The little ajumma run bakeries are okay though if you want asian style stuff. Most of the stuff is fried though. Korea has a weird fascination with fried dough though like churros, doughnuts, etc

Also croquettes.. they butcher the hell out of them by putting fish cake into them.

The asia clade is known to have lower saliva production than the anglo clade or the nigger clade. Due to their drier mouths they prefer softer, moister, goopier textures when consuming food.
This also serves to explain why many Japanese pornography often utilizes ring gags. They are stimulated by the concept of a moist, overflowing with saliva orifice which appears exotic in their eyes.

>Vietnamese bread is baller
Yeap.. because the place we call Vietnam now was a colony of the French..

My wife is Vietnamese and she loves Kings Hawaiian rolls because they are --very-- similar in taste to Vietnamese bread.
>>
>>7180699
They didn't have a culture of bread early on so they didn't develop it to the sophistication found in Europe and the Near East. Maybe they didn't have wheat early on in their development so they didn't brew beer with it so they didn't find out about starters so they didn't find out about gluten.

The Japanese prefer a moister, chewier bread. In Yakitate Japan they attribute this to differences in saliva production but personally I think it's because the preference is for bread more like rice and mochi.

I actually love all the buns at my local ching chong shop, red bean paste is great, but poppy filling, and even cheese buns are delicious. Steamed stuff like poak buns are great too, but not strictly speaking bread alone.
